Why this recipe WORKS:
QUICK RISE:
We use 2 tablespoons of instant yeast in the dough(no, you didn’t read that wrong, tablespoons!). This gives our bread a quick rise. We skip the whole first rise after mixing together the dough, and go straight to shaping. Then we let the challah rest for 10 minutes before baking.
SUPERIOR TEXTURE:
This challah tastes incredible thanks to lots of olive oil and honey in the dough. Normally, i use canola oil in my challah recipe. But because we cut the rise time, which in turn would normally make for a less flavorful bread, we swap olive oil (and some salt)to add back in flavor.
Honey gives the dough a soft texture and helps with a longer shelf life, not that you’ll have any left!
How to make it:
- Add yeast, water, sugar and olive oil to a bowl, mix, and let sit for 5 minutes until the yeast is bubbly.
- Add the rest of the ingredients and mix well.
- Flour your work surface with 1/4 cup flour and knead the dough until smooth.
- Divide into 10.
- Add sesame, sugar, and salt to a tray and mix. Whet a paper towel or kitchen towel and wring it out(it should be damp).
- Shape each piece into a rope, roll on the towel to slightly whet the dough, and dredge in sesame.
- Shape.
- Place the challahs on a baking tray and let rest for 10 minutes. Spritz with honey water.
- Preheat the oven and bake for 10-15 minutes.
- Spritz again with honey water(optional! will make the dough a bit sticky!), and enjoy.
(Half Hour) Sesame Honey Challah
Ingredients
- 2 Tbsp yeast (instant or active)
- 1 1/2 cup warm water
- 1 tsp sugar
- 1/3 cup olive oil
- 1/4 cup honey
- 2 tsp salt
- 2 eggs
- 6 cup flour
Sesame topping
- 1 1/2 cup (200gram) sesame seeds
- 1 Tbsp sugar
- 1 tsp salt
Honey Water
- 2 Tbsp honey
- 2 Tbsp boiling water
Instructions
- To a bowl add yeast, water, sugar and olive oil. Mix and let sit for 5 minutes, until mixture is bubbly.Add honey, salt, eggs, and flour. Mix in a stand mixture until the dough is smooth, or flour your work surface and knead by hand for about 2 minutes.
- Divide dough into 10 equal pieces.
Sesame topping
- Add sesame, salt, and sugar to a baking tray and mix. Whet a paper towel or clean kitchen towel and wring it out. place next to your work surface.
- Shape each dough into a long rope and roll onto the towel to whet the rope on all sides(this will make the sesame topping stick).Dredge in sesame.
- Shape into mini challah knots. (see video on instagram for the shape pictured here).
- Place on a baking tray fitted with parchment and let rest 10 minutes.
Honey Spritz and Bake
- Preheat oven to 200 celsius.
- Add honey to a spritzer and pour over boiling water, shake to mix. Spritz rolls and bake for 10-15 minutes, until just turning golden.Optional0 spritz again for extra sweetness. Enjoy!
