We’ve had these a couple times this week already- once for dinner and once for lunch!
I have a few recipes for fried chicken- this Lemon Chicken is my go to for a Chinese style dinner, and I love these Kentucky fried wings. Today I wanted a sweet and spicy recipe using no sugar and a sauce without a bunch of fancy ingredients- and here we are!
Crispy Chicken Bites
The trick for the crispiest chicken that STAYS crispy- is adding a little bit of the marinade to the dry mix and whisking it to create clumps. The clumps create these crunchy bites on each piece of chicken that really contrast with the tender meat on the inside.
My kids love the chicken straight from the fryer! Because the marinade has flavor in it already, these taste great even without the sauce. I usually leave a plate for snacking and toss the rest in the pan for the Big Kids(that’s me and hub lol!)
Tender Fried Chicken Marinade
For a soft tender chicken bite marinate the chicken first(just 15-20 minutes will do), in a mix of cornstarch, oil, soy sauce, and egg white.
Add a little marinade to the flour-cornstarch mix and then toss the rest of the marinade with the chicken. This step is great to prep the night before.
Hot Honey Sauce
This is one pan- throw everything in, hot honey sauce.
For ultimate sweetness and bite we use:
- Fresh Garlic
- Honey
- sriracha
- rice vinegar
- garlic powder and paprika
Sauce the garlic for a minute and then add the sauce ingredients straight to the pan. Add in the fried chicken, toss, and enjoy!
Hot Honey Chicken Bites
Ingredients
- 1 Kilo Chicken
marinade
- 1 Egg white
- 2 Tbs Cornstarch
- 2 Tbs Mirin
- 1 Tbs Soy sauce
- ½ Tbs Oil
- Remove one Tbs
dry mix
- 1 cup Flour
- 1 cup Cornstarch
- ½ tsp baking powder
- ¼ tsp salt
hot honey sauce
- ⅓ cup Honey
- 2 Tbs Sriracha
- 5 cloves Garlic
- ⅓ cup Rice vinegar
- 1 tsp garlic powder
- 1 tsp paprika
Instructions
dry mix
- combine ingredients for the dry mix with a whisk.
marinade
- combine marinade ingredients. Add one and a half tablespoon of the marinade to the dry mix and whisk to combine. To the remaining marinade, add the chicken cubes and let sit for a minimum of 15 minutes, up to overnight in the fridge. When finishing marinating, place chicken pieces in the dry mix and coat each well.
- heat 2 inches of oil in a wok or fry pan and fry chicken until golden and crispy. Drain and set aside.
hot honey sauce
- in a wok or fry pan, heat a tablespoon of oil and add the chopped garlic. Saute for one minute and add the rest of the sauce ingredients. Add in the chicken and toss to coat. Enjoy hot and finish with a sprinkle of crushed chilli flakes, if desired.
