To a bowl add yeast, water, sugar and olive oil. Mix and let sit for 5 minutes, until mixture is bubbly.Add honey, salt, eggs, and flour. Mix in a stand mixture until the dough is smooth, or flour your work surface and knead by hand for about 2 minutes.
Divide dough into 10 equal pieces.
Sesame topping
Add sesame, salt, and sugar to a baking tray and mix. Whet a paper towel or clean kitchen towel and wring it out. place next to your work surface.
Shape each dough into a long rope and roll onto the towel to whet the rope on all sides(this will make the sesame topping stick).Dredge in sesame.
Shape into mini challah knots. (see video on instagram for the shape pictured here).
Place on a baking tray fitted with parchment and let rest 10 minutes.
Honey Spritz and Bake
Preheat oven to 200 celsius.
Add honey to a spritzer and pour over boiling water, shake to mix. Spritz rolls and bake for 10-15 minutes, until just turning golden.Optional0 spritz again for extra sweetness. Enjoy!
