
When I’m craving crispy golden breaded schnitzel but also want to eat a little healthier…i make this Healthier Schnitzel Bowl! Breaded with crispy onions and lots of spices for all the flavor, served with thin matchstick fries and a fresh salad, its the perfect dinner.
There are multiple recipes for schnitzel on this site..the most popular being my world-famous Honey Garlic Chicken Katsu and Sesame Schnitzelonim, but today we are doing it a little different.
These schnitzels are pan fried in a little olive oil, air fried, or baked, and they still come out so deliciously crispy!
Breading for Healthier Schnitzel
For these healthier schnitzels, we cut back on the breadcrumbs and add in crispy onion flakes and sesame seeds for the same crunch, with less calories.
for the seasonings:
- olive oil keeps the coating on, without the egg
- breadcrumbs use golden breadcrumbs or panko
- dried onion flakes for extra flavor and extra crunch
- smoked paprika
- dried parsley, oregano, and basil
- garlic powder
- red pepper flakes
Air fried or Baked Schnitzel
Air frying, baking, or lightly pan searing schnitzel is the best way to be a little healthier and ditch the deep fryer.
To air fry: air fry at 390°F for 30 minutes, making sure the chicken is not touching one another
To bake: Bake at 425°F (220°C), bake for 10 minutes, flip with tongs, then bake another 10-12 minutes till golden.
To sear: Heat 3 tablespoons olive oil in a skillet and add schnitzel in a single layer, sear till golden, flip, and sear the second side, drain on a paper towel or wire rack. Do this in batches, adding more olive oil as necessary.
Healthier Schnitzel Bowl
Ingredients
- 2 lb chicken tenders or breast
- 3 Tbs sesame seeds
- 3 Tbs olive oil
- 5 Tbs breadcrumbs
- 2 Tbs dried onion flakes
- 4 tsp smoked paprika
- 2 tsp garlic powder
- 1 tsp dried parsley
- 1 tsp salt
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp red pepper flakes
for the bowl
- One Russet potato, scrubbed and dried, skin on one cucumber, sliced into tiny cubes
- One tomato sliced into tiny cubes
Instructions
- Add everything to a ziplock bag or bowl and toss well to coat evenly.
- COOK:
- Air fry 390°F for 30 minutes.
- Or
- Add 3 Tbs olive oil to a hot skillet and cook schnitzels in batches 3 minutes per side till crispy. Clean pan and add oil if needed once between batches.
- Serve with israeli salad and roasted potatoes.
for the bowl
- using a mandolin with the small shredder option, slice the potato into matchstick fries. Heat oil 1-2 inches deep in a fry pan and fry potato sticks till golden, remove to a paper towel and salt immediately.
- serve with chopped salad, torn lettuce, and schnitzels. Enjoy!
