I was getting a lot of requests for easy crockpot meals…apparently I’m not the only busy mom who likes a big hearty meal at the end of a long day(of work, or parenting, of the endless laundry).
We’re big snackers in our house but I love a quality, sit down meal at the end of the day. It gets nice and quiet(or um, not lol!! we do have four kids!), sometimes a candle is lit, and we can indulge in yummy food together.
Slow Cooker Beef and Potatoes
This is the easiest recipes for slow cooker beef and potatoes- the perfect meal to finish your day! With only 10 minutes of prep time, and a simple ingredient list…lets start!
What you need for this recipe:
Short ribs: i like to use boneless short ribs(called asado in some countries). this is an inexpensive cut of meat and gets really nice and tender when cooked low and slow. If you want a substitution, use your favorite stew meat, sliced into 1-inch chunks).
Spices:
- fresh garlic and granulated garlic for all the flavours.
- dried oregano and dried parlsey
- salt and pepper
- diced onion
- olive oil
Potatoes: you can use baby potatoes, baby reds, or regular sized potatoes sliced into wedges. I’ve tried this recipe out with all of them and they are delicious! Use what you like or what you have in your pantry.
Tips for making beef bites and potatoes
- No liquid required. The slow cooker creates steam and will render out liquid and moisture from the meat while it cooks, so dont fret, you didnt read it wrong, there is liquid needed!
- Seperate meat and potatoes. Cook the meat on one side of the slow cooker and the potatoes on the other. It just looks pretty serving them up seperately, like you made two different things even though we didn’t have to do that extra work!
- Low or High. You can go for a “faster” cook on high for 4-4.5 hours, or set the slow cooker on in the morning to be ready you get home, and use the low setting for 6-8 hours. Once you get a feel for your specific cooker(different brands cook differently), you can adjust cooking times as necessary!
- No finishing. The beef bites on the edge of the slow cooker will get nice and brown, like you finished them off in the oven. Trust in the process and let your crockpot do the work with no extra steps!


Slow Cooker Beef Bites and Potatoes
Ingredients
- 2-2.5 lbs Short Ribs sliced into 1 inch chunks
- 2 tsp Garlic powder
- 2 tsp salt
- 1 tsp dried oregano
- 1 tsp dried parsley
- 3 tsp paprika
- ½ tsp pepper
- 5 Garlic cloves chopped
- 2-3 handfuls Baby potatoes some whole and some halved (can also use regular potatoes sliced into wedges)
- 5 Tbs Olive oil
- 1 onion chopped
- Parsley to garnish
Instructions
- Add beef bites to the bottom of your slow cooker. Sprinkle over seasonings, Mix to coat meat in spices. Add chopped onions and garlic. Stir to combine.
- Add potatoes to the cooker so the beef is on one side and potatoes are on the other. Season potatoes with salt, pepper, and garlic powder.
- Drizzle everything with olive oil.
- Cover and cook on low
- 6-8 hours, until beef is very tender, or on high 4-4.5 hrs.
- Garnish with parsley.
