Tik Tok has become famous for their food trends and if I’m being honest as soon as I see “TIKTOK HACK”, I’m interested- because you can be sure it will be FUN, FAST, and EASY.

Well hey, come to think of it that’s exactly what I want when breakfast comes around! You’re going to love how simple these little pancake bites are, and how they hit all the spots!
Banana Pancakes Before : When the general population thinks “banana pancake”, we’re thinking of pancake batter with mashed bananas, essentially banana flavored pancakes. I was never jumping over the moon for these. If I’m going to mash bananas I’ll be making my favorite fluffy banana muffins or a butter banana cake.
Banana Pancakes Now: With this fun hack we’re ditching the mashed bananas and enjoying them as a real fresh yummy banana slice- coated in pancake batter. Crispy on the edges, fluffy in the middle. Those are always the best pancakes in my opinion!

How to Make Fluffy Mini Banana Pancakes
This whole breakfast comes together in 10 minutes!
First we’ll whip up the pancake batter. I love the combination of banana and coconut so today I’m making this really yummy coconut pancake batter- a simple batter of flour, baking powder, milk, and egg with the addition of shredded coconut. Hawaiian vibes every day eh?
SUBSTITUTION: If you don't like coconut, you can swap it out for 1/4 cup of whole wheat or regular flour.
Next slice the bananas. I found this batter to be enough to coat 2-3 bananas worth of slices. Make sure you slice 1/2 inch thick- if the bananas are too thick and stand high in the pan, the edges won’t cook when coated with batter.
Lastly- dip and cook. Grab a fork and dunk the banana slices one by one into the batter, making sure to coat both sides. Add immediately to a frying pan with some hot butter. Leave space between the coated bananas so the edges can get nice and golden. Cook both sides and transfer to a plate. Hey- that’s it!

Best Breakfast
These mini pancakes are perfect for babies- Nadav(who is now 2.5!) loved that he didn’t need to use a knife and could eat a whole plate all by himself. I loved that we had a fast, yummy, and healthy breakfast on the table!

Mini Fluffy Banana Pancakes
Equipment
- frying pan
Ingredients
- 2-3 bananas
- 3/4 cup flour
- 1/4 cup shredded coconut
- 2 tsp baking powder
- 1/2 TBSP sugar
- 3/4 cup milk
- 1 small egg
- 2 TBSP canola oil or melted butter
- butter for cooking
Instructions
Pancake Batter
- In a bowl, combine flour, baking powder, salt, sugar. Make a well in the centre and add the milk, egg, and 2 TBSP oil or melted butter. Mix to combine.
Dip Bananas
- Slice the bananas into fairly thin slices- about 1/2 inch each. Add a hunk of butter(about 1/2 TBSP) to your frying pan and let that heat up. Once the butter is melted, use a fork to grab one banana slice and dip it into the pancake batter. Make sure to coat the whole thing.
Cook
- Add the dipped pancakes one at a time to the pan and cook until golden on the edges. Flip and cook the second side. Remove to a plate and continue until all the slices are cooked. Serve with maple syrup and whipped cream. Enjoy!
