Mini Fluffy Banana Pancakes

Mini banana pancakes- little slices of banana coated in a fluffy coconut pancake batter!

Equipment

  • frying pan

Ingredients
  

  • 2-3 bananas
  • 3/4 cup flour
  • 1/4 cup shredded coconut
  • 2 tsp baking powder
  • 1/2 TBSP sugar
  • 3/4 cup milk
  • 1 small egg
  • 2 TBSP canola oil or melted butter
  • butter for cooking

Instructions
 

Pancake Batter

  • In a bowl, combine flour, baking powder, salt, sugar. Make a well in the centre and add the milk, egg, and 2 TBSP oil or melted butter. Mix to combine.

Dip Bananas

  • Slice the bananas into fairly thin slices- about 1/2 inch each.
    Add a hunk of butter(about 1/2 TBSP) to your frying pan and let that heat up. Once the butter is melted, use a fork to grab one banana slice and dip it into the pancake batter. Make sure to coat the whole thing.

Cook

  • Add the dipped pancakes one at a time to the pan and cook until golden on the edges. Flip and cook the second side. Remove to a plate and continue until all the slices are cooked.
    Serve with maple syrup and whipped cream. Enjoy!
