My sister-in-law Chevy has four boys. They don’t eat much[besides the four golden foods- you know kids]. While I’m over here breaking my arm trying to keep my daughter out of the fridge, her boys are happily playing on empty stomaches.
The good news is- cottage cheese is a pretty “normal”, somewhat “healthy” food, and these pancakes are a GO! for the boys! I don’t think there’s been a day when i’ve been over and these aren’t bubbling in a pan.
Breakfast, lunch, and dinner with these cottage cheese pancakes!
Of course, kiddie food is the best, and I always sneak a pancake in, even when it’s dinnertime and there’s steak on the grill(Chevys husband makes a MEAN steak!). So naturally, after all those little bites, I ended up falling for these lovely golden pancakes.
I wake up on Sundays now and crave them.
And you know what- they are so easy to make that it’s okay. Throw your ingredients into a bowl, mix it up, butter up a pan, and fry.

yeah I know these are usually for kids but this batch was MINE and I eat my pancakes on pretty gold plates with a hot frothy cup of coffee and lots of maple syrup. SO THERE.

Easy Cottage Cheese Pancakes
Ingredients
- 2 containers(500 grams) cottage cheese
- 2/3 cup flour
- 1/4 cup sugar
- 2 eggs
- butter for frying
- chocolate chips -optional
Instructions
- Combine all ingredients in a mixing bowl. Heat a frying pan over medium heat- add a dollop of butter. Once butter is melted, spoon about 1/4 cup of batter into pan, making little rounds. [sprinkle on chocolate chips now if desired] Cook until bubbles appear on the top of the first side. Flip and cook another minute. Enjoy!
