BackStory: Living in Israel for the past 8 years, I have found it hard NOT to start cooking the Middle Eastern way. Locally sourced veggies and a shuk full of tantalizing spices has made it easy to ease into this vast cuisine. My palette has changed to adapt to the heat, and I started my toddlers out young with tachina and hummus.
You will be happy to find that Middle Eastern food is full of flavour, yet uses few and simple ingredients. In my kitchen, and the recipes here for you to try, we favor Moroccan dishes and Arab and Israeli food, as these are the mentors I find to teach me- whether that be a neighbor or the man behind the meat counter who knows the Makluba ingredients by heart. As we say in Israel, Bit-eh-avon! (bon apetit!)
