Simple Homemade Cinnamon Bagels (10 bagels/30 mini bagels)

Ingredients
  

Dough

  • 5 cups flour
  • 2 cups warm water
  • 2 tablespoons sugar or honey
  • 2 teaspoons instant yeast
  • 2 teaspoons salt
  • 2 tablespoons oil

For boiling

  • Large pot of water

Filling

  • 1 tablespoon brown sugar
  • 2 teaspoons cinnamon

  • Mix warm water, yeast, and sugar/honey. Let sit 5 minutes (if using active dry yeast).
  • Add flour, salt, and oil. Knead until smooth and elastic:
  • Mixer: 8–10 minutes
  • By hand: about 10–12 minutes
  • Cover and let rise until doubled, about 1 hr.
    Combine cinnamon and brown sugar and sprinkle over the dough, gently fold it in.
  • Divide into 10 pieces for regular sized bagels or 20-30 pieces for mini bagels

Shape:

  • Roll each piece into a ball.
  • Poke a hole through the center with a finger, add in the other pointer finger from the other hand and move your fingers in a circle motion to stretch into a bagel shape.
  • Let rest 15–20 minutes.

Boil

  • Boil each bagel about 45-60 seconds per side. Remove with a slotted spoon and place on a baking tray fitted with parchment.
    bake at 425°F / 220°C for 20–25 minutes until golden., flipping tray halfway through
