Ingredients
  

For the Poké:

  • 500 grams ahi tuna cut into large cubes (see note for tips)
  • ½ white onion thinly sliced
  • 2 scallion stalks thinly sliced
  • 2-3 Tablespoon soy sauce
  • 2 ½ teaspoon sesame oil
  • 1/2 teaspoon chilli flakes

Island Sauce:

  • cup mayonnaise
  • 2 teaspoon lemon juice
  • ½ teaspoon mustard
  • 1 teaspoon soy sauce
  • ¼ teaspoon sriracha

For the won ton:

  • 10 black sesame wontons
  • ½ an avocado
  • Chives

Instructions
 

For the Poke:

  • In a medium sized bowl, combine the tuna cubes with onion slices, soy sauce, sesame oil, and chilli flakes. Mix to combine well, cover, and place in the fridge to marinate for around an hour.

For the island sauce:

  • Combine all ingredients for the sauce in a small bowl and mix to combine well. Transfer to a squeeze bottle or ziplock bag(cut off the corner to create a squeeze container for easy drizzling.

To Assemble:

  • Peel the avocado and thinly slice it, then gently press down on the slices to fan them out.
  • Top each wonton with a couple of avocado slices, and top with ahi poke. Drizzle with island sauce. Add chopped chives to the top of each.

Notes

For the best flavor, use the freshest, sashimi-grade (or sushi- grade) tuna available. Look for a steak that is red or deep purple, and avoid tuna steaks that are brown or dull( this often means the fish has been exposed to oxygen and is not fresh).
