Peel and slice potatoes into thick round slices, between ¼-1/2 inch thick.
Place in a pot. Add the chicken on top, and pour in the ½ can of mushrooms, without the liquids.
Add all seasonings and pour over water.
Bring to a boil, then lower heat and simmer until the chicken is falling off the bone and potatoes are tender, about 2 hours.
To serve, arrange in a shallow serving dish, or bring to the table directly in the cooking pot. Enjoy!
Note: If you like garlic, you can add in a whole head of garlic, peeled and smashed. This is how I personally like it! The garlic gets nice and soft and adds more great flavour to the dish.
