Cheesy Caprese Pizza Bombs

Stacks of mozzarella cheese, sundried tomatoes, and fresh basil wrapped in pizza dough and baked to cheesy perfection.

Ingredients
  

  • 350 grams mozzarella, or a pack of mozzarella slices(i used a block)
  • 1 package/jar sundried tomatoes
  • 1 cup fresh basil leaves
  • 3-5 balls(each weighing about 227 Gram) of ready made pizza dough(each ball of dough makes about 5 bombs)

Garlic Herb Butter

  • 50 grams butter
  • 1 clove garlic, crushed or very finely minced
  • 1/2 Tbs fresh parsley, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp salt

Instructions
 

  • First set out your ingredients.
    Slice the mozzarella into squares, each about 1 1/2 in. in length, and cut the sundried tomatoes in half if they're big. Wash and dry the basil well.
    Make the filling by stacking a mozzarealla slice, tomatoe and a basil leaf, then a mozarella slice, tomatoe, basil, etc. three times over. Top the last basil leaf with a cheese slice, so there should be 4 slices in all.
  • Preheat your oven to the highest setting.
    Flour your work surface and slice a ball of pizza dough into roughly 5 pieces. Tap each piece down with your fingers to form a small disk. Place a caprese filling stack in the centre, and fold up the sides to close the filling inside the dough. Flip it over so the smooth side is on top, and place onto a baking tray fitted with a baking sheet. Leave an inch or two between each pizza bomb.
    Finish all the bombs. Bake for 5-7 minutes on high heat, until the tops are golden.

Garlic Herb Butter

  • In a small pot or a microwave safe bowl, heat up the butter and minced garlic, till just fragrent- a minute or two in a pot. (you can sub olive oil for butter if needed). Add the parsley, oregano, and salt, and mix to combine. Hot out of the oven, brush the herb butter over the pizza bombs. Eat hot!
